Mushroom & Leek Soup

Serves 6
Ingredients:

  • 2 tbs unsalted butter
  • 2 tbs vegetable oil
  • 4 carrots, peeled, cut Julienne
  • 2 leeks white part only, halved lengthwise sliced crosswise ¼ inch strips
  • 1lb (500g) fresh Shitakes brushed clean, stems cut, sliced Julienne
  • ¼ lb white fresh mushrooms, cut Julienne
  • 2 tsp finely chopped garlic
  • 3 cups beef broth
  • 3 cups chicken broth
  • ½ tsp salt
  • ¼ tsp ground pepper
  • Wedge of good Parmesan
  • 4 fresh parsley sprigs

Directions

In a large deep-sided saucepan over med. heat, melt butter with vegetable oil.
When hot, add carrots and cook stirring until slightly softened 2-3 minutes.

Add leeks and cook, 3-4 minutes longer.

Add shitakes and white mushrooms and garlic, cook for 5 minutes.

Add beef and chicken broth, salt, and pepper and simmer uncovered until all vegetables are tender, about 15 minutes.

Taste and adjust seasoning.

Serve, ladle into bowls.

Shave slices Parmesan, garnish with parsley.

It is known that the leek has been a symbol of Wales for a long time.

Shakespeare, for example, refers to the custom of wearing a leek as an “ancient tradition” in Henry V. In the play, Henry tells Fluellen that he is wearing a leek “for I am Welsh, you know, good countryman”.
