Pork Neck & Collard Greens
1 1/2 quarts water
1 teaspoon crushed red pepper
1 1/2 pounds pork neck bones, or 2 ham hocks
8 pounds collards
2 teaspoons sugar
1/2 cup cider or white vinegar
Salt and pepper
Place water in a large pot. Add red pepper and bones or hocks and simmer for about 1 hour while preparing greens.
